What MD-2 pineapple is
MD-2 is the most widespread pineapple variety in the international fresh-fruit trade, also known as golden pineapple. It won out over older varieties thanks to traits that matter in foodservice: deep golden flesh, a sweet flavor with moderate acidity and consistent behavior in handling and transport.
Panama grows and exports it, so for a local business it is a locally grown product with an export-grade standard. In our catalog it appears simply as pineapple; if your kitchen knows it as golden pineapple or MD-2, we are talking about the same fruit.
Size and ripeness, in practical terms
Size is how big the fruit is and, in wholesale practice, it defines how many pineapples a box holds: the bigger the fruit, the fewer units per box. Which size suits you depends on the use: for portioning even buffet slices, medium, uniform fruit is usually preferred; for juice, exact size matters less than total yield.
Ripeness can be judged in broad strokes by shell color, which runs from green to golden. It is an orientation, not an exact measure of sweetness, but it helps when ordering: more golden fruit for immediate use in juice or cut fruit; less advanced fruit if you will work through it over several days.
Uses in the professional kitchen
Few fruits work as hard in a food operation as the pineapple:
- Juice bars and smoothies: a sweet base that pairs with nearly the entire tropical catalog.
- Breakfast buffets and cut fruit: slices and cubes with stable color and good yield per unit.
- Pastry and desserts: tarts, upside-down cakes and roasted fruit.
- Savory cooking: sweet-and-sour sauces, glazes, the grill and dishes with ham or pork.
- Bar and cocktails: juice, garnish and macerated fruit.
How to order it: by the unit or by the box
Pineapple is quoted by the unit or by the box. The unit suits occasional needs or trials; the box is the natural format when there is steady demand for juice, buffet or production. Since the number of fruits per box depends on the sizes available, ask for the current contents when you request a quote and work out your cost per fruit.
One clear line on your list is enough: “Pineapple — box — 4” or “Pineapple — unit — 10”, with a note on the use (juice, buffet, pastry) so the team can advise you on the ripeness that serves you best.
When you do not want to peel: processed formats
Peeling and portioning pineapple takes kitchen time and leaves shell and crown waste. If your operation prefers to hand off that work, the catalog includes processed pineapple and 4 oz pineapple cups for points of sale; other formats — chunks, spears, pulp for beverages, IQF chunks for smoothies and pastry, or NFC juice — can be evaluated on request depending on availability. Each format changes the cost per servable portion: it is worth quoting both fresh and processed and weighing them against your kitchen time.
It is not an all-or-nothing decision. Many operations combine: whole fruit for the buffet, where the piece is on display, and a processed format for juice or pastry production, where only yield matters. The right mix depends on your volume and your team, and it gets fine-tuned by quoting both routes.
